FÜLÖP – the Unconventional Dry Tokaji
arrow_backTo the overviewA blend of Furmint, Hárslevelű and Muscat.
The stork Fülöp was born in 2003 in Spain, in the valley of the Ebro River. It is unknown whether he ever left Europe, but it is certain that from 2006 onward he lived in and around Bodrogkeresztúr. He raised 37 chicks; his mate always moved on, but he stayed. In winter he kept warm on chimneys, drank from the waters of the Bodrog River, hunted voles, and all the stork nests in the area belonged to him.
We bottled this fresh and crisp dry Tokaji in memory of our eccentric stork, who for 15 years was the stork of the region — and of everyone.
Proceeds from the sale of this wine support the maintenance of local stork nests, the construction of nesting platforms, and the installation of bird‑safe electrical insulation.
Food pairing
Pairs well with rich, rustic and complex pork dishes, ragouts and stews
Excellent with white‑mold aged cheeses, and also works well alongside mature cheddar
Can be confidently recommended with mildly spiced Far Eastern dishes, pork belly, as well as
Oxtail or beef cheek — it favors more gelatinous cuts of meat
A great companion to grilled dishes, especially when boldly seasoned
From Hungarian cuisine, it would pair beautifully with stuffed cabbage, in both summer and winter versions
Fish paprikash
