In 2016, a handful of gastronomic personalities had the vision, courage and drive to redefine alcohol-free sparkling wines. What they created was an exciting paradox: refreshing, elegant and simple non-alcoholic wine alternatives ("proxies"). To achieve these unique flavour experiences, we use the traditional fermentation known from champagne, but stimulated with new technical approaches to brewing.
