Since 1888, Them Andelsmejeri has transformed milk into cheese with deep respect for craftsmanship, nature, and our local surroundings. Everything is made on a single site in Them – from the moment the milk is collected from local farms, to the cheese being aged and packed. This ensures full quality control and a production process with minimal environmental impact.
Them Gastro is our tribute to gastronomic craftsmanship. Here, we bring together our most ambitious and flavour-rich specialty cheeses – created for the professional kitchen. Each cheese is developed in small batches with great care for the raw material and the artisanry behind it.

The Maestro Series: Long-aged specialty cheeses with great depth and complexity – ideal for cheese boards or as flavour enhancers in dishes.
Kongensbro: A harmonious new classic with roundness and balance – made with Them’s signature cultures, developing velvety richness and crunchy protein crystals during maturation.
Nielsen Havarti: A long-aged, organic Havarti with a satisfying crunch from crystals formed by the breakdown of protein salts – a tribute to Denmark’s cheese pioneer Hanne Nielsen.
The Skovland Series: Three organic cheeses created in close collaboration with our farmers and inspired by the surrounding nature. Skovland is our take on how flavour, soil, and biodiversity can merge in a new kind of Danish cheese.
Skovland Maestro: Firm and aged, with notes of spruce and gin from juniper.
Tårn Hvid: Soft white mold cheese with buttery richness and hints of mushroom.
Skovland Rød: Washed rind cheese with cream, anise, and aromas of spruce and countryside.
