An induction kettle can heat between 20 – 200°C and the frying surface reaches 200 C in approx. 90 seconds, during which a traditional kettle first has to start producing steam before it gets hot, and it can only heat between 80 – 120° C. The induction kettle is a very efficient kettle that can reach 140°C., so that can be browned in it. With the induction kettle you start cooking immediately and therefore must have your ingredients ready at start-up. This can optimize the workflow in a large kitchen, as the cooking process starts faster than current traditional kettles allow.
The induction kettle is controlled with 1 ° C precision on the frying surface, where the heat is transferred efficiently from the induction coils. The precise temperature allows for high uniformity and precise cooking. Working with the exact temperature allows you to use the right temperature for different ingredients, so that they are cooked to perfection. Prepare e.g. sous vide between 40 – 80°C, boil around 100°C or sear/brown your ingredients at 140°C or above!
In the induction kettle several temperature sensors are located in the bottom. These sensors ensure that it regulates the heat quickly and efficiently during temperature fluctuations. When you add cold ingredients in the kettle, the sensor notices it quickly and then regulates the heat so that it hits the desired temperature, which is selected. When you turn off the heat, the heat transfer stops immediately and because the frying surface is made of encapsulated aluminum, it does not hold the heat, as you can experience with traditional kettles, where the ingredients can cook after you have turned off the heat.
The combination of induction and digital technology means that the induction kettle does not use excess energy to achieve the desired temperature for cooking or maintain the heat in the kettle during production. It calculates the required need to reach the desired temperature, after which it transfers the necessary energy to reach the temperature. Therefore, efficiency and energy saving can be combined.
