60% Xinomavro, 40% Syrah
VINIFICATION - MATURATION
Rosé vinification begins with the early harvest of the grapes of the two varieties. Direct pressing of the grapes to minimize the color extraction to achieve the desired pale pink. Fermentation takes place at controlled low temperatures to maximize the floral and fruity notes.
COLOR
Pale salmon color.
TASTING NOTES
Both varieties are harvested earlier than their optimal maturity to create a pale color rose with delicate aromas of citrus, botanical notes, strawberry and tomato leaves. In the mouth is rich due to the presence of Syrah and has high acidity thanks to the Xinomavro, pleasant and refreshing aftertaste.
FOOD PAIRING
Ideally, it accompanies Mediterranean dishes, appetizers, green salads and seasonal fresh fruits. You can also enjoy as an aperitif.
