He immediately won an award for his oil, sent a sample to a handful restaurants, and then found himself working with many top chefs. Chrysovalantis followed him and together they have taken a difficult path that leads them to quality.
"These trees are a legacy that we did not want to leave in the hands of others. We were born and raised in olive trees, we are descendants of people who loved their land. We decided to invest in the excellent olive oil of this place, in a product that we believe in, that is gifted and directly linked to our Cretan, Mediterranean and modern way of life. We wanted to take the work one step further, standardize our oil and run to achieve its recognition."
Nature helps them and they help nature. They manage about three thousand trees, olive groves aged from thirty to over a thousand years. They took the fields of their fellow villagers that had been abandoned. They changed the way they are managed, instead of spraying the grass in these cuts, they planted vetch to give nitrogen to the soil, they apply the logic of un-cultivation, returning the cut fauna of the field to the subsoil, so that the trees get the ingredients they need from there.
