Dagrofa Foodservice's specialist HKI Ost is the only cheese supplier in Denmark with its own affineur room , where in temperature-controlled "caves" they care for, wash and brush cheeses to ripen them to perfection. In the ripening rooms, they simulate the real natural environment with control of humidity and temperature, so that they come as close to the environment as would be in a natural cave. HKI Ost often acts as a refining center for the small dairies, which means that the dairies can boost their production because they can take over the ripening process from them. They often get the cheeses when they are young, so they can leave our mark and shape them themselves.
We primarily work with cheeses with a natural rind in Grotten. The rind makes the cheese alive and can develop delicious, complex flavors. The simulated natural environment also provides the opportunity to experiment with different humidity and temperature conditions and thus become even more knowledgeable about the wonderful world of cheeses.
In the years they have had Grotten, they have experimented with storage time on different types of cheese. What is of great interest is how the cheeses develop during the first ripening period, where they can follow the young cheeses and see their potential come to light. This is clearly seen on the cheeses, especially when working with natural rind, where you can see the character formation from the outside.
